Scrambled Egg, Cheese and Spinach Bagel

How to make

  1. Carefully crack the egg into a small bowl and add the milk. Season with the salt and pepper and whisk well until combined and slightly frothy.
  2. Heat a small non-stick pan over medium heat. Melt a teaspoon of butter in the pan, tilting it to cover the base and sides.
  3. As soon as the butter begins to froth, pour the egg mixture into the pan and add the baby spinach and grated cheese.
  4. Stir gently with a rubber spatula as the eggs begin to cook. Do not whisk! This will allow the eggs to gently scramble.
  5. Once the eggs are scrambled, lightly toast the bagels. Place the bottom slice on a plate and add the scrambled eggs on top, then dress with a generous helping of sriracha sauce.
  6. Add the top layer of the bagel and serve!
